Uncle Jack


My Uncle Jack is in the hospital and is in the process of dying. He has lived a good long life and just celebrated his 82nd birthday. I have alot of memories of him as being a fun, life of the party type of guy who was always happy to see everyone.

For my animal friends



Ok is this a GOAT or a SHEEP. I say goat, others say its a sheep. I say because it is not wooly it is a goat. Experts? It has a course straight hair coat. I found a picture of what is called a Barbados Black belly Sheep, called a hair sheep. I guess it may be a sheep after all!
Here is an easy recipe for Au Gratin Potatoes and Ham. My Mother used to make a similar recipe. Begin by slicing up some onion, ham and potato. Layer the ham and potatoes in a casserole dish that has been lightly greased before. Preheat oven to 350F. In large skillet, melt 1/3 cup butter, saute onions and then add only onions to ham and potatoes. Add 3 T flour to butter and stir until combined and turns a nice brown color. Slowly add your milk about 3 cups, stirring all the while. When mixture bubbles and thickens add 2 cups of cheddar cheese. Pour over potatoes and ham and mix in. Bake in oven until its bubbly and potatoes are tender! Enjoy!
